不同產(chǎn)區(qū)濃香型與清香型烤煙內(nèi)在化學(xué)成分含量分析

摘 要:為了揭示影響烤煙香型風(fēng)格的主要化學(xué)特性指標(biāo),研究以湖南郴州、河南許昌、云南文山和福建三明4個煙區(qū)的煙葉作為濃香型和清香型煙葉的代表,對煙葉的內(nèi)在化學(xué)成分含量進(jìn)行了比較分析。結(jié)果表明,湖南郴州和河南許昌兩個煙區(qū)的濃香型煙葉在總糖和煙堿含量上的差異不明顯,云南文山和福建三明兩個煙區(qū)的清香型煙葉在總氮含量上沒有差異,這表明總糖和煙堿是濃香型煙葉的決定因素,而總氮含量是清香型煙葉的決定因素。湖南郴州和河南許昌為代表的濃香型煙葉與云南文山和福建三明為代表的清香型煙葉在化學(xué)指標(biāo)上總糖、還原糖、煙堿、糖堿比和兩糖差均達(dá)到極顯著差異(P<0.01),表明濃香型與清香型煙葉的差異主要表現(xiàn)在糖和煙堿上,低糖和低堿成為濃香型的煙葉特色。

Comparative Analysis on Chemical Properties between Strong-flavor Style and Fan-flavor Style Flue-Cured Tobacco in Different Areas

Abstract:In order to reveal the chemical properties which affect the aromatic style of the tobacco, the tobacco from the city of Chenzhou in Hunan and Xuchang in Henan was chosen to represent the strong-flavor style flue-cured tobacco, and the fen-flavor style flue-cured tobacco from the city of Baoshan in Yunnan and Sanming in Fujian , comparative analysis were made in the chemical properties of the tobacco. The results showed no significant difference between Chenzhou and Xuchang in total sugar as well as nicotine content , while no difference between Baoshan and Sanming in total nitrogen content . It can come to a conclusion that total sugar and nicotine are the determining factors for strong-flavor style flue-cured tobacco and total nitrogen is the determining factor for fan-flavor style flue-cured tobacco. Besides, the two compare groups were significantly different(P <0.01) in total sugar, reducing sugar, nicotine, the ratio of total sugar to nicotine, and differences between total sugar and reducing sugar. All that showed sugar and nicotine were the main difference between the two kinds of tobacco and low-sugar and low- nicotine were the characteristics of strong-flavor style flue-cured tobacco.

根據(jù)香型風(fēng)格烤煙可分為濃香型、清香型和中間香型3種。這3種香型風(fēng)格煙葉都是中式卷煙的重要原料,并賦予各類卷煙品牌不同的風(fēng)格特征。不同的生態(tài)環(huán)境是影響香型風(fēng)格形成的重要因素[1]。因此,國內(nèi)的專家學(xué)者紛紛對香型風(fēng)格類型的評判標(biāo)準(zhǔn)進(jìn)行了量化研究[2-3]。例如李章海等[4]采用煙葉香型指數(shù)法研究了我國5個不同生態(tài)煙區(qū)的烤煙香型風(fēng)格,結(jié)果表明在同一生態(tài)煙區(qū)不同產(chǎn)煙縣煙葉香型風(fēng)格的類型差異不明顯。但是,目前同時研究濃香型煙葉和清香型煙葉理化特性的差異以及同一香型風(fēng)格煙葉在不同生態(tài)生態(tài)產(chǎn)區(qū)的理化特性的差異的報道較少見。因此,研究選取湖南郴州、河南許昌、云南文山和福建三明4個煙草主產(chǎn)區(qū)的煙葉為材料,系統(tǒng)地比較分析了濃香型煙葉與清香型煙葉以及同一香型不同生態(tài)產(chǎn)區(qū)煙葉理化指標(biāo)的差異,旨在明確濃香型煙葉與清香型煙葉、同一香型不同產(chǎn)區(qū)煙葉理化指標(biāo)的差異,為卷煙工業(yè)選取原料提供科學(xué)依據(jù)。
